Here's a recipe for Coconut Daal that serves 4-6 people
Ingredients:
- - 1 cup red lentils, washed and drained
- - 3 cups water
- - 1 can (13.5 oz) coconut milk
- - 1 small onion, finely chopped
- - 3 cloves garlic, minced
- - 1 tablespoon grated ginger
- - 1 teaspoon ground turmeric
- - 1 teaspoon ground cumin
- - 1 teaspoon ground coriander
- - 1/2 teaspoon cayenne pepper
- - Salt to taste
- - 1 tablespoon vegetable oil
- - Fresh cilantro, chopped (optional)
Instructions:
1. In a medium pot, bring the lentils and water to a boil. Reduce heat to low and simmer for 20-25 minutes or until the lentils are tender.
2. In a large skillet, heat the vegetable oil over medium heat. Add the onion and sauté for 5-7 minutes until softened and lightly browned.
3. Add the garlic and ginger to the skillet and sauté for another 2 minutes.
