Shahi Paneer is a famous North Indian dish made with delicate paneer 3D squares cooked in a rich and velvety tomato and cashew-based sauce. Here is a recipe to make Shahi Paneer at home:
Ingredients:
- 250 grams paneer, cut into solid shapes
- 2 onions, finely cleaved
- 2 tomatoes, finely cleaved
- 1/2 cup cashews
- 2 green chilies, cut
- 1 tablespoon ginger-garlic glue
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon coriander powder
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon red bean stew powder
- 1/2 teaspoon garam masala powder
- 1/2 cup weighty cream
- 2 tablespoons ghee or oil
- Salt, to taste
- New coriander leaves, hacked to decorate
Instructions:
Heat 1 tablespoon of ghee or oil in a container over medium intensity. Add the paneer solid shapes and broil until brilliant brown. Eliminate the paneer from the skillet and put it away.
In a similar container, add the leftover ghee or oil. Add cumin seeds and let them snap.
Add onions, green chilies, and ginger-garlic glue, and sauté until the onions are clear.
Add tomatoes, cashews, coriander powder, turmeric powder, red bean stew powder, and salt. Blend well and cook until the tomatoes are delicate and soft.
Switch off the intensity and let the combination cool down. Move the combination to a blender and mix it into a smooth puree.
Move the puree back to the dish and cook it for a couple of moments until it thickens.
Add the seared paneer 3D squares and garam masala powder to the container. Blend well and cook for 2-3 minutes.
Add weighty cream and blend well. Cook for another 2-3 minutes.
Decorate with slashed coriander leaves and serve hot with rice or naan.
