Palak Paneer is a popular Indian vegetarian dish made with spinach and paneer (Indian cottage cheese). Here's a recipe to make it at home:
Ingredients:
- 500g spinach, washed and chopped
- 200g paneer, cubed
- 1 large onion, finely chopped
- 3-4 garlic cloves, minced
- 1-2 green chillies, chopped (optional)
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp red chilli powder (optional)
- 1/2 tsp garam masala powder
- 2 tbsp oil or ghee
- Salt to taste
Directions:
Blanch the spinach: Bring a large pot of water to boil, add the chopped spinach and let it cook for 2-3 minutes. Drain the spinach and rinse it with cold water. Squeeze out the excess water from the spinach and keep it aside.
Heat oil or ghee in a pan and add cumin seeds. Let them splutter.
Add finely chopped onions and sauté until they turn translucent.
Add minced garlic and chopped green chillies (if using) and sauté for a minute.
Add coriander powder, turmeric powder and red chilli powder (if using) and sauté for a few seconds.
Add the blanched spinach and salt to the pan and mix well. Cook for 2-3 minutes.
Add cubed paneer to the pan and mix well. Cook for another 2-3 minutes.
Add garam masala powder and mix well.
Serve hot with roti, naan or rice.
Note: You can adjust the spice levels according to your taste. Also, you can puree the spinach mixture in a blender for a smoother consistency if you prefer.
