Here's a basic recipe to get you started

Ingredients:


2 tablespoons butter or oil

1 onion, chopped

2-3 cloves garlic, minced

3-4 cups mixed vegetables (carrots, celery, potatoes, broccoli, peas, etc.), chopped

4 cups vegetable broth or chicken broth

1 bay leaf

1 teaspoon dried thyme or other herbs of your choice

Salt and pepper to taste

1 cup heavy cream or half-and-half

Chopped fresh parsley for garnish


Instructions:

1: Heat the butter or oil in a large pot over medium heat. Add the chopped onion and saute for
a few minutes until it becomes translucent.


2: Add the minced garlic and saute for another 1-2 minutes until fragrant.


3: Add the mixed vegetables to the pot and stir to combine with the onion and garlic. Cook for about 5-7 minutes, stirring occasionally, until the vegetables start to soften.


4: Pour in the vegetable or chicken broth. Add the bay leaf and dried thyme (or other herbs of your choice). Season with salt and pepper to taste.


5: Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let the soup simmer for about 20-25 minutes, or until the vegetables are tender.


6: Remove the bay leaf from the pot and discard it.


7: Use an immersion blender to puree the soup until smooth and creamy. Alternatively, you can carefully transfer the soup in batches to a regular blender and blend until smooth. Be cautious when blending hot liquids.


8: Return the blended soup to the pot and place it over low heat. Stir in the heavy cream or half-and-half, and let the soup heat through. Do not let it come to a boil once the cream is added.


9: Taste the soup and adjust the seasoning with more salt and pepper if needed.


10: Serve the creamy vegetable soup hot, garnished with chopped fresh parsley.
